Hot Nasi Goreng

5-6 cups cooked & cooled long grain rice
2 -3 tbs oyster Sauce
1 tbsp fish sauce
4 tbs oil
1 brown onion, finely chopped
1 tbs garlic paste / chopped garlic
1 tbs ginger paste
3 tbs chilli shrimp paste (recipe on my web site  )
1/2 carrot, peeled, finely chopped
½ cup cabbage thinly sliced
½ cup red capcicum chopped
½ cup green capsicum chopped
1/2 cup spring onion chopped to 1 cm piece
1 small chicken breast fillet, chopped
½ cup prawns, peeled and deviened
2/1 cup squid cut in to circles
3-4 tbs dry chilli pieces
Salt to taste
1 tsb chicken stock (optional)
1 – 2 tbs crushed pepper

To serve:
4 eggs, fried sunny-side-up
Marinate chicken and seafood separately with salt and crushed pepper and cook separately covering with a lid. (Prawns and squid will take about 3- 5 minutes to cook, and chicken will take about 10 minutes. )
Heat oil in wok over high heat. Add garlic and ginger paste, brown onion, chicken stock cube and stire-fry for around 1 minute or until aromatic and onion is translucent. Then add chicken, prawns and squid and cook for another minute and rest of the vegitables except spring onions. Mix well and add rice, sauces, chilli paste, chilli pieces and enough salt. Mix well and cook until the rice has heated thourgh. Switch off the heat and add spring onions and mix.

5. Spoon nasi goreng onto serving plates and serve with a fried egg and extra chilli shrimp paste on the side.
